Our wine making philosophy:
The cool conditions are ideal for Sauvignon Blanc which shows expressive notes of green fruits and minerality in the wine. The palate is rich and complex with a distinct freshness. We put great emphasis on canopy development to support the development of the grapes.
For our Viognier & Chenin Blanc we use wild yeast fermentation to enhance the natural fermented flavours in the wines which shows strong apple and citrus notes.
Our Shiraz is serious in structure and style. Our unique location brings spice and earthy tones to the wine which is fermented in older 225L French Oak barrels for 24 months. The focus is not on the wood ageing but rather to develop more natural tones and flavours. We also blend in late picked Viognier to improve the structure.
We make a Blanc de Noir from an early pick on our Shiraz with limited skin contact to give a crisp dry wine.
Our wine making philosophy is based on minimal interference as the terroir gives a fantastic balance naturally. Our aim is to allow the terroir to reflect in the wines.

On a windy and rainy winter afternoon we decided to build our ideal red blend that we would enjoy over the warmer summer months and long cool evenings. The 2016 Fountainhead is a blend of predominantly Cabernet Sauvignon and Merlot sourced from the cool valleys of the Breede river.
